| Happy
New Year from all of us at the Victoria!
|
|
We had a busy Christmas
here. The day itself started early with the chefs
in at 7am firing up the ovens ready to roast 9 very
large Norfolk turkeys and huge amounts of roast
potatoes. The following days were equally busy right
up to New Years Eve which saw us host a terrific
party.
(To those of you who were dancing on tables
at 4am – we know who you are, and we have photos
to prove it!) |
|
| As the New Year
got underway we found ourselves held hostage as
snowfall became a daily event – very pretty but
not that helpful to our business plan! Investing
in a second wood burning stove now looks like
one of our most inspired decisions. |
|
Despite the snow
it’s been business as usual here all the way.
Do have a look at our most current
menus and treat yourself to
a heart and soul warming couple of hours on the
edge of a chilly though beautiful Richmond Park. |

| Notes
from the kitchen |
|
After a truly
hectic Christmas I was kind of looking forward
to a quiet couple of months with my feet up however
that hasn’t been the case….it's full
steam ahead in the kitchen.
Our new
A la Carte menu is heaving
with fantastic British produce…. |
|
| Our smoked trout
rilette is made using brown trout smoked in the
traditional way, high up a chimney over slowly
burning oak logs. It tastes fantastic… |
|
| I was recently
introduced to a man who farms snails in the West
Country which are as good as any I have eaten
in France so look out for them if that’s
your thing… |
|
| The unrivalled
Yorkshire rhubarb is available and we will be
featuring it alongside a white chocolate cheese
cake and more unusually as an accompaniment to
grilled mackerel… |
|
| Fish
generally is actually very good at this time of
year as long as conditions allow the fishermen
to get out to sea. Cockles, brown shrimps, herrings
and mussels will all be featured during January
and February… |
|
| British
puds are an absolute essential during the colder
months so expect to find bread and butter pudding,
steamed sponge and sticky toffee available at
various times during the month… |
|
| However
if all this talk of cold weather and hearty food
is not your thing you can still find something
light and healthy on the menu such as a roasted
butternut risotto with toasted hazel nuts and
red chicory or for the ultimate guilty pleasure
there’s our exotic fruit Pavlova –
home made meringue with golden pineapple, nectarine,
lychees and mango in a truly exotic passion fruit
coulis.
Finally, as I write we have just taken delivery
of 80kg of Seville oranges which need to be turned
into marmalade so I’m off back to the kitchen! |
|
Happy New Year Bon appétit |

| P.S.
By the way another date for your diary……. Don’t
forget that July 11th is the date of the World
Cup Final and Greg says that if New Zealand win
he will buy pink champagne for everyone in Sheen…..err
right! |
